The mercury is rising, so #SundaySupper is here with an entire menu for Summer Chillin’ – meaning food served cold to help you beat the heat. And who says a cool lunch or dinner can’t heat you up with a kick of spice? Get all your favorite hot wings flavor, including the carrots and blue cheese that go along with them, all in this Greek yogurt-based, protein-packed Buffalo and Blue Cheese Chicken Salad.
Buffalo Chicken Salad with Blue Cheese
For the longest time, The Hubby was anti-GPS. Refused to get one, refused to let me get one. He always said he preferred to get directions and look at a map because he is a visual person, and didn’t want to trust a silly device. Well, I was very glad when I got an iPhone that I could use as a GPS, because my sense of direction leaves something to be desired. Well, when we got our minivan, it came with a built-in navigation system, thus replacing The Hubby’s previous built-in navigation system – ME. Not really a good idea, given my aforementioned issues with being directionally impaired.
This is where the problem comes in – he leaves vacation planning to me. This includes how to get to where we are going and all of our day trips and excursions while we are there. I use a combination of the nav system in the van and the nav system on my phone. So what is the problem, you ask?
He trusts neither me, nor Siri, nor Angelina (our minivan). Well, he trusts us until he doesn’t trust us, and then when he doesn’t trust us, he either follows us and then gets mad if we are leading him in a direction that he doesn’t think is right or he follows us and then gets mad because he thinks his way would have been better or doesn’t follow us and goes his own way and gets mad when that is the wrong way to go.
JUST. CAN’T. WIN.
Get yourself a freakin’ map and figure it out yourself. Before we are in the car, two small children buckled into carseats, about to pull out of the driveways or parking lot.
You know what you can always rely on, though? Making pretty much anything “Buffalo-style”. I’ve been on a kick lately – tots, has, and now chicken salad…
Buffalo and Blue Cheese Chicken Salad is another fabulous way for me to get my Buffalo chicken fix. And my blue cheese fix. Two of my favorite things ever, despite the fact that I don’t like Buffalo wings. And my chicken salad fix, since I don’t like a ton of mayo, but love love love chicken salad when I make it with Greek yogurt to replace most or all of the mayo. Definitely makes it lighter and adds more protein and calcium, and I think the slight tanginess complements the blue cheese and cools off the hot sauce just a bit. Though you can totally adjust that up or down, depending on your heat tolerance level. I tend to hold back a little so that my boys will eat it, but then add some extra to my own serving.
I’m totally thinking adding some bacon would be pretty much awesome, too, like my Buffalo Bacon Blue Dip, because, well, umm, bacon! Pretty much makes everything better. But since we are talking about cold foods today and I used leftover chicken, I didn’t want you to feel pressured to heat up your kitchen to cook up some bacon.

Buffalo Chicken Salad with Blue Cheese
Buffalo Chicken Salad with Blue Cheese brings your favorite hot wings flavor to a cold chicken salad, perfect for topping some greens or stuffing in a sandwich!

Total: 5 minutes mins
Ingredients
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise I used Light
- 4 Tablespoons total of hot sauce plus apple cider vinegar I used 3 Tablespoons hot sauce plus 1 Tablespoon vinegar, but you can adjust to your desired heat level
- 2 cups cooked and cooled chicken shredded and/or chopped
- 1/2 cup shredded carrots
- 1/2 cup crumbled blue cheese use a gluten-free variety if that is a concern for you
- salt and pepper to taste
Instructions
In a large bowl, stir together the Greek yogurt, mayonnaise, hot sauce, and apple cider vinegar.
Stir in the chicken and carrots until coated, then gently stern in the blue cheese.
Season to taste with salt and pepper, if desired.
Serve on top of salad greens, on a sandwich, in a pita, etc.
