I seriously love adapting our family favorite recipes to be low carb and keto friendly. This dish is my take on the classic loaded potato soup recipe that I used to make all the time. Dare I say, this loaded cauliflower soup tastes even better than the original?

HOW TO MAKE KETO CAULIFLOWER AND BACON SOUP:

INGREDIENTS THAT YOU WILL NEED:

  • 2 cups cauliflower, riced
  • 1/2 cup heavy cream
  • 1/2 onion, diced
  • 2 celery stalks, diced
  • 8 cups chicken stock
  • 2 slices of bacon, diced (reserve half)
  • 1 green onion stalk, diced
  • 1/4 cup cheddar cheese, grated
  • Salt and black pepper to taste

  1. Add cauliflower, celery, onion, and chicken stock to a large pot or dutch oven.

  1. Bring to a rolling boil and simmer for 20 minutes.

  1. Add cream and salt and pepper to taste.
  1. Allow the soup to cool slightly before using an immersion blender to blend all of the ingredients together. This is theimmersion blenderthat I use.

  1. Once everything is blended smooth, add half of the bacon bits, return the soup to the stove over medium heat. Cook for another 10 minutes.

  1. To serve, top with remaining bacon bits, cheese, and green onions. You could even add a little sour cream if you wanted to.

  • Try adding cream cheese or parmesan to this healthy soup recipe.
  • Use coconut milk or coconut cream instead of heavy cream.
  • Add chopped onion or diced garlic cloves to the stock.

Tips and Tricks:

  • Instead of using chicken broth, try vegetable broth.
  • After a roast chicken dinner, don’t throw away the bones. Use them to make your own chicken bone broth. It freezes well and you can have it on hand whenever you are in the mood for this or any other delicious soups.
  • Don’t have an immersion blender? A regular blender will also work. Just make sure to vent the lid. The hot liquid can create a bit of a high pressure situation! A food processor could also be used.
  • For a roasted cauliflower soup, spread your cauliflower florets out on a baking sheet, add a drizzle of olive oil, and roast at 350 degrees for 20 minutes, until they are nice and golden brown. Then continue with the soup recipe.
  • Store leftovers in the fridge, in an airtight container, for up to 5 days.

2. Bring to a rolling boil and simmer for 20 minutes.

3. Add cream and salt & pepper to taste.

4. Allow the soup to cool slightly before using an emersion blender to blend all of the ingredients together. This is the emersion blender that I use.

5. Once everything is blended smooth, add half of the bacon bits, return the soup to the stove and heat on medium. Cook for another 10 minutes.

6. To serve, top with remaining bacon bits, cheese and green onion.
