I’ve made this super indulgent slice a few times now as it’s the perfect treat for parties, cake stalls and it is also the ultimate after dinner mint, it’s also a great recipe to make as I just can’t stomach the combination of peppermint and chocolate (hello chocolate toothpaste!) so I know I’m going to leave it alone! You can make this slice easily both using a Thermomix or the regular way and each method will have you popping this slice into the fridge to set within 15 minutes.

Ingredients:

To make this no bake Peppermint Slice, you will need:

  • Peppermint Crisp Chocolate Bars

  • 250 grams plain biscuits Marie Biscuits or similar
  • 400 grams of white chocolate 2 blocks

  • Roughly chop ALL of the peppermint crisp bars and add HALF of the chopped pieces to the bowl with the biscuit crumbs. Set the remaining pieces aside for later.

  • Break the peppermint chocolate into squares and place it along with the butter (which has been cut into cubes) into a microwave safe bowl and cook for 30 second spurts on a medium high heat until melted.

  • Place the slice into the fridge to set, and after approximately 2 hours, remove and cut into small slices

Thermomix Instructions

  • Without washing the Thermomix bowl, add the butter (cut into cubes), condensed milk and peppermint chocolate which has been broken into squares and cook for 3 minutes, 60 degrees, speed 3. If it’s not quite combined at the end of the cooking time (time taken will depend on temperature of the ingredients), cook for a further 1 minute, 60 degrees, speed 3.

  • Add the biscuits and HALF of your peppermint crisp pieces to your Thermomix bowl and mix for 20 seconds, speed 2 REVERSE or until combined.

  • Pour the mixture into your prepared tin (it will be a little sticky) and use a metal spoon to spread and flatten the surface.

  • Place the white chocolate into a CLEAN Thermomix bowl and cook for 3 minutes, 50 degrees, speed 2 before scraping down the sides and cooking for a further 1 minutes, 50 degrees, speed 2 or until melted.

  • Pour the melted white chocolate over the top of your slice and use the remaining peppermint crisp pieces to decorate it. Place it into the fridge for a minimum of 2 hours to set before cutting into small pieces.

Very yummy, but I recommend NOT chopping up the peppermint crisp bars which is a very messy process and requires a knife and chopping board. Rather, they are EASILY broken up with your fingers while still in the packet! No mess, no fuss! Also, using my 21.5cm square slice tin the white chocolate layer was way too thick and difficult to cut through (my own fault for using a smaller tin). I would make this again, but adjust white choc for my tin next time. Thank you for this recipe, Lauren!

Insanely sweet and delicious. Looks great, quick to make. I used a block of peppermint chocolate with the gooey centre and worked great. I’d forgotten just how awesome peppermint crisp bars are, lovely to rediscover them.

Hi Lauren! Thanks so much for sharing. For the 200g peppermint chocolate, do you mean peppermint crisp chocolate?
Also how should these bars be stored and how long would they last?
Thanks again, from South Africa <3

Hi Natalie, I use the Cadbury Peppermint filled chocolate blocks, however you can use peppermint crip bars too. I keep this slice in the fridge for up to a week. I hope that helps 🙂

Hi Natalie, you could use a mint Aero block, or peppermint-filled squares block. You only need 180g of peppermint chocolate =)

This was so quick and easy for the school cake stall. I replaced the Peppermint Crisp in the slice, for another block of cut up peppermint chocolate pieces, and then sprinkled extra Peppermint Crisp over the top of the slice. Everybody loved it!

Hi Ange, I haven’t tried freezing this one before I’m afraid. I’d just be a little cautious about how the chocolate would go when defrosted.
